Move over Rice Krispie Treats, there’s a new, more nutritious favourite in town.
Love Child Organics’ multi-grain Toodle Os make a delicious and fun snack or cereal, but did you know they are also an amazing recipe ingredient? They are perfect for cheesecake bases, yogurt parfaits, and for bar treats like this one.
Every Father’s Day, together the kids and I make John some sweet treats. This year we’re making Crispy and Chewy Banana Chocolate Treats, made from banana flavour Toodle Os. With only 6 simple ingredients they are super easy to make, and while these bars aren’t exactly a health food, they definitely could be considered a healthier treat. And they are sooooo good. Like seriously, I ate 3/4 of pan all by myself. Not exaggerating.

What you will need:
1 and 1/2 bags of Love Child Organics Banana Toodle Os (about 115 grams)
1/2 cup smooth almond butter
3/4 cup brown rice syrup
Pinch sea salt
1/4 cup chocolate chips (any kind you like)
1/2 tsp coconut oil
Optional: 2 tbsp finely chopped banana chips for sprinkling on top.
What to do:
Put the Toodle Os into a large bowl. With a potato masher, pestle or any other crushing apparatus, break up with Toodle Os into pieces. You don’t want to crush them too much and make a powder, you just want them to not be in O shapes anymore. Alternatively you could give them a very quick pulse in a food processor.
Over medium heat, heat the brown rice syrup until it is hot and begins to bubble.
Take it off the heat and add the almond butter and salt. Stir until the almond butter is nicely melted into the brown rice syrup.
Pour the syrup mixture over the Toodle Os then gently mix until the Os are fully coated.
Using a damp wooden spoon or a silicone spatula, press the mixture into an 8 x8 inch square pan. The almond butter provides oil, so you shouldn’t need to pre-grease the pan.
Melt the chocolate chips and the coconut oil in a double boiler or in the microwave. I used the microwave and it took just over thirty seconds. I was then able to melt the last of the chocolate chips by giving it a good stir.
Using a small spoon or a fork, drizzle the chocolate over the bars. Sprinkle on the banana chips if using. Allow to cool or put them in the fridge for half an hour to firm them up more quickly.
Cut into bars and give them to a great Dad!
