Shamrock Zucchini Smoothie Bowl Recipe

Happy March! If you live in Canada, anywhere outside out British Columbia, you must be just as excited as I am for spring. I live in Winnipeg which is alternatively known as “Winterpeg” and for a good reason. In my household, we are beyond ready for some extra sunshine and green everything, food included. What better way to celebrate the upcoming change in weather than to join in on some St. Patrick’s Day festivities. It is the one day where our children will be willing to eat all things green, so let’s take advantage.

I am a huge fan of smoothies as they are a fantastic way to receive a generous dose of nutrients. We particularly love adding zucchini to our smoothies. Zucchini is a powerful little veggie that often goes unnoticed, but zucchini is full of powerful antioxidants and fibre – I suggest leaving the skin on here to get the full benefits. Zucchini is also a wonderful source of potassion. Did you know that a zucchini has more potassium than a banana?

Below is one of my family’s favourite green smoothie recipes. For St. Patrick’s Day serve it in a bowl and have some shamrock fun decorating it. I used a heart shaped cookie cutter to give me the outline of the leaves and made a little stem. I traced everything with chia seeds and once I had my stencil-I filled it in! It was really easy, fun, and was a huge hit with my toddler.

Shamrock zucchini Smoothie Bowl recipe

*Makes 2 smoothie bowls

Ingredients:

  • 2 cups spinach
  • 1 small zucchini, cut in half
 (keep the skin on, that’s where the antioxidants and fibre live!)
  • 1 green apple, cut in large chunks
  • 1 cup pineapple pieces
  • 1/8 cup hemp hearts
  • 1 inch piece fresh ginger root
  • ¾ cup-1 cup unsweetened coconut milk or any other milk of choice

Directions:

  1. Blend all ingredients together in a blender. For a smoothie bowl, you want the texture to be a little thicker than a traditional smoothie blend. I’d recommend adding little amounts of liquid at a time and keep adding as necessary to blend.
  2. Pour the smoothie into bowls and garnish!
