At last, we have entered the season of fun in the sun. The time for picnics, barbecues, and evening bike rides. It is also the time where that dang Ice Cream Truck rolls around the neighbourhood, asking for our money in sing song form. Although our children may be at this sugar mobile’s beck and call, we can still win them over.
Homemade sweet treats are thankfully, incredibly easy to make. This is great news since we parents are always looking for a quick and easy solution to satisfy our children. When we make our own popsicles, we control what goes in them. We have the say in how much sugar they are going to be licking up. We can create desserts for them that can actually support their health and all for the fraction of the price that the Ice Cream Truck is charging us.
I added some chai into these pops as I knew it held a flavour profile that would pair nicely with the rest of the ingredients. Should you not have a chai blend on hand, simply just adding some cinnamon or nutmeg would taste just as great. Hemp hearts were also added for a boost of quality protein which is ideal for snacks and treats.
Pineapple Coconut Popsicles
Fills 5 twin popsicle molds
- 2 cups pineapple (1 cup chopped and 1 cup to be blended)
- 1 ripe banana
- 400 mL coconut milk (canned)
- 2 tbsp. hemp hearts
- 1 tsp. honey
- 1 tsp. chai spice blend
- Mix all ingredients except for the chopped pineapple in a blender.
- Evenly distribute the chopped pineapple pieces into each popsicle mold.
- Pour the blended coconut milk mixture into the molds.
- Freeze for 5 hours before enjoying.
