Smoothies will always be my favourite way to include vegetables in our diet. Believe it or not, it is actually fairly easy to incorporate a variety of different vegetables in a smoothie without anyone noticing. Colour coordination is key as well as using at least one fruit higher in natural sugars (banana, pineapple, mango, grapes).
Since a green smoothie with spinach is the classic go-to recipe, I’ve decided to share one of our family favourites that inspire the use of some other nutritious ingredients. This gorgeous and vibrant yellow blend has steamed cauliflower and butternut squash added and they both are untraceable. Needless to say, the nutritional value packed in this smoothie is on another level.
*A Helpful Tip: When preparing different vegetables for dinners or specific recipes, make extra to use in smoothies. Steamed veggies also freeze like a dream so they can be used at a later date as well. Our favourite fun vegetables to use in smoothies are cauliflower, butternut squash, sweet potato, carrots, beets, zucchini, cucumber, and of course, leafy greens.
Hello Yellow Smoothie
*Makes 1 large smoothie or 2 small
- 1 ripe banana
- 1 cup pineapple or mango
- ¼ cup steamed or boiled cauliflower
- ½ cup steamed or boiled butternut squash
- 1 Tbsp. lemon juice
- 1 Tsp. ground flax (optional)
- ½ Tsp. cinnamon
- 1-1.5 cup coconut milk or water
- Blend all ingredients together in a blender. Add more liquid if necessary or desired.
