Spring is approaching quickly, and along with it, many of our favourite green vegetables will be back in season! To encourage our children to eat all things green, now is a good time to get their taste buds accustomed. Whip up a green smoothie and prove to your children or even your picky friends and family members just how delicious these colourful blends can be. They will forever be converted and shake their heads in shame that they came late to the green smoothie game.
You see, green smoothies are really the sweetest of them all. Though the greens may mask the colours of the other fruits, the fruit flavours still come out on top. Bananas, pineapples, and mangoes are some of our favourite fruits, and their tropical, sweet flavours make them prime contenders for green smoothies. So, all in all, we know it will be a win-win situation. Plan ahead this year my fellow parents, and while you are at it, you might as well encourage your pickiest eaters to give green peas and broccoli another chance. All hail spring!
Green Island Smoothie
Makes 2 servings
- 2 large kale leaves
- 1 handful spinach
- 1 banana
- 1 cup pineapple
- ½ small avocado or ⅓ of a large
- 1.5-2 cups milk/milk alternative (I used unsweetened cashew milk)
- Optional but recommended: ¼ cup unsweetened shredded coconut or coconut butter (this will bring the smoothie to a tropical place)
Place all ingredients in a blender and mix until you have reached a creamy and smooth texture.
