Cooking with Love Child Video: Roasted Root Vegetable, Apple and Quinoa Puree

Roasted Root Vegetable, Apple and Quinoa Puree

Ingredients:

2 apples, variety of your choice, peeled and chopped into large chunks

1 small yam, peeled and chopped into small pieces (or sweet potato depending on what you call it- we mean the orange one!)

1 small beet, peeled and chopped into very thin pieces

1 teaspoon olive oil

Half an orange

3 tablespoons cooked quinoa

Pinch of cinnamon

Boiled water

 Method:

Preheat oven to 400 degrees.

Lightly oil a roasting tin and pour in the peeled and diced apples, yams and beets. Cover with a lid or with foil.

Roast the fruit and vegetables until they are soft. This will take anywhere from 20-40 minutes depending on how small you chopped everything.

Once cool enough to handle, puree the roasted apples and vegetables with the quinoa and a good squeeze of fresh juice from the orange.

Add pre-boiled water to thin the puree to the desired consistency.

Cool and serve.

Freeze extra puree in BPA free ice-cube trays or specialty baby food storage containers and use for future meals.
